Personal challenges - how to account for your progress

Hi everyone
I was thinking about creating my JustGiving page but my personal challenge which I'm thinking to take on in order to gain support and raise money, it's more of a don't-do-it thing, rather than do-it.
A friend at work gave me the idea when she decided not to eat sweet, puddings and other yummy things for a year, but instead, put all the money which would otherwise be spent on sweets - in a fundraising kitty.
Now, my question is. If you're asking for support people who don't know you that well, and who will need some sort of proof that you're doing what you say you're doing, what kind of evidence can you supply them with? How can someone prove that they're committed enough and will hold on to whatever they've decided to do?
People might be deterred by the lack of evidence and a photo reading: "Me and the 10 buns I didn't eat!" might not go a long way.
